Festive Casual Cinco de Mayo Looks

With everything that has been going on, life has felt like it is on repeat in some sort of time warp, and it is rather hard to believe that May is upon us! That means that one of our favorite excuses to drink margaritas and eat yummy Mexican food is almost here….  You guessed it, Cinco de Mayo! Normally, we would be gathering at our favorite local Mexican restaurant with a group of friends to celebrate… Even though we can’t necessarily go out or have a big party, we can still celebrate at home with those that are closest to us. So, in the spirit of fun May 5th festivities, we are sharing some of our favorite recipes and a couple of casual Cinco de Mayo looks for y’all to enjoy! 

 

Effortless Style’s Favorite Festive Dishes

Hand Blended Margaritas

Ingredients:

½ of a 6 ounce can limeade (defrost and shake before dividing in half)

6 ounces tequila

6 ounces triple sec

Pours of Grand Marnier and Patron

 

Directions:

Put the half can of defrosted limeade, tequila, and triple sec in a blender.  Fill the blender with ice and blend.  Pour into salted glasses and top with a pour each of Grand Marnier and Patron.

 

Chicken Enchiladas With Green Sauce

Ingredients:

1 package large burrito shells

1 package shredded Monterey Jack cheese

4 cooked chicken breasts, cubed or shredded

One small can of green chilies

3-4 cans of green chili sauce (mild, medium, or hot – your choice!

1 small onion, diced

1 clove garlic, minced

2 packages of cream cheese

1 cup of salsa

 

Directions:

In a Dutch oven, sauté the onions and garlic.  Add both packages of cream cheese until melted on low heat.  Add the salsa and the cooked chicken, heat, and stir.

Fill the burrito shells with the above filling, sprinkle with the Monterey Jack cheese, and roll (will end up being about 8-10 burritos).  Place the rolled burritos in a casserole pan sprayed with Pam.  Cover the burritos with the green chili sauce and the remaining cheese.  Bake covered with foil for 30 – 40 minutes at 350 degrees.

 

Citrusy Guacamole

Ingredients:

5 avocados

1 or 2 lime(s)

Orange 

Sea Salt

 

Directions:

Mash the avocados and squeeze the juice from the lime(s) and orange into the avocado.  Sprinkle with sea salt to taste.  Gently mix.
